Fried Alligator Bites

Serves: 3–4

Ingredients:

  • 1 lb alligator meat (tenderloin or tail), cut into bite-sized pieces
  • 1 cup buttermilk

  • 1/2 cup cornmeal
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper (optional, for heat)

Instructions:

  1. Marinate the meat:
    • Place alligator pieces in a bowl and pour buttermilk over them.
    • Let them soak for at least 30 minutes (or up to 2 hours) in the fridge. This helps tenderize the meat.
  2. Prepare the coating:
    • In a shallow bowl, mix flour, cornmeal, paprika, garlic powder, cayenne, salt, and pepper.
  3. Heat the oil:
    • Pour about 1–2 inches of vegetable oil into a deep skillet or pan.
    • Heat to 350°F (175°C).
  4. Fry the alligator:
    • Remove pieces from buttermilk, letting excess drip off.
    • Dredge in the flour/cornmeal mixture, coating evenly.
    • Fry in batches for 3–5 minutes, turning occasionally, until golden brown and cooked through.
  5. Drain and serve:
    • Place fried alligator on a paper towel-lined plate to drain excess oil.
    • Serve hot with lemon wedges and your favorite dipping sauce.

  • Alligator meat can be slightly chewy if overcooked, so don’t fry too long.
  • For extra flavor, season the flour mixture with Old Bay or Cajun seasoning.
  • It’s great as an appetizer, in tacos, or over rice.
