Easy Egg Roll Recipe (Makes about 10–12)
Ingredients
Filling
- 1 tablespoon oil
- 1 cup shredded cabbage (or coleslaw mix)
- ½ cup shredded carrots
- ½ cup cooked chicken or leave it out for vegetarian
- 1 teaspoon soy sauce
- ½ teaspoon garlic powder (or 1 small garlic clove, minced)
- Salt and pepper (a pinch)
Other
- Egg roll wrappers
- 1 egg (beaten, for sealing)
- Oil for frying or baking
Instructions
- Cook the filling
- Heat 1 tablespoon oil in a pan over medium heat.
- Add chicken (if using), cabbage, and carrots.
- Cook 3–4 minutes until soft.
- Stir in soy sauce, garlic, salt, and pepper.
- Let the filling cool a little.
- Wrap the egg rolls
- Place one wrapper like a diamond.
- Put 2 tablespoons of filling in the center.
- Fold bottom corner up, fold in the sides, then roll tightly.
- Brush the top corner with beaten egg to seal.
- Cook them
- Frying: Heat oil in a pan. Fry egg rolls until golden brown, turning carefully.
- Baking: Brush with oil and bake at 400°F (205°C) for 15–20 minutes, flipping halfway.
- Air fryer: Cook at 375°F (190°C) for about 10–12 minutes.
- Serve
- Let cool slightly and serve with soy sauce or sweet chili sauce.
Tips
- Don’t overfill—this keeps them from bursting.
- Keep wrappers covered with a damp towel so they don’t dry out.
