French Onion Meatloaf

Ingredients

For the meatloaf

  • 1 kg (2.2 lb) ground beef (or mix beef + pork)
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme

For the French onion topping

  • 2–3 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • Salt & pepper to taste
  • 1/2 tsp thyme (optional)
  • 1 cup shredded Swiss or Gruyère cheese

Optional glaze

  • 1/4 cup ketchup
  • 1 tbsp Dijon mustard

Instructions

  1. Caramelize the onions
    • Heat butter + olive oil in a skillet over medium-low heat.
    • Add onions, sprinkle sugar, salt, and pepper.
    • Cook 20–25 minutes until soft, golden, and sweet. Add thyme near the end. Set aside.
  2. Prepare the meatloaf
    • Preheat oven to 180°C (350°F).
    • In a large bowl, combine ground meat, breadcrumbs, egg, milk, Worcestershire, salt, pepper, and garlic powder.
    • Mix gently until just combined.
  3. Shape and assemble
    • Form meat mixture into a loaf shape on a lined baking sheet or in a loaf pan.
    • Spread caramelized onions evenly over the top.
    • Sprinkle shredded cheese on top of the onions.
    • Optional: brush glaze over the edges of the meatloaf.
  4. Bake
    • Bake 50–60 minutes until meat is cooked through (internal temp ~70°C / 160°F).
    • For extra browning, broil 2–3 minutes at the end.
  5. Rest & serve
    • Let the meatloaf rest 5–10 minutes before slicing.
    • Serve with mashed potatoes or roasted vegetables.
