Shepherd’s Pie Recipe
Ingredients
Meat filling
- 1 lb ground meat (traditionally lamb; beef works too)
- 1 small onion, chopped
- 1 cup frozen peas and carrots
- 1 cup corn (optional)
- 2 cloves garlic (or 1 tsp garlic powder)
- 1 tablespoon tomato paste
- 1 cup broth (chicken or beef)
- Salt and pepper to taste
Mashed potato topping
- 4–5 medium potatoes, peeled and chopped
- 2 tablespoons butter
- ¼ cup milk
- Salt to taste
Instructions
- Make the mashed potatoes
- Boil potatoes in salted water until soft.
- Drain, mash with butter, milk, and salt. Set aside.
- Cook the filling
- Brown the ground meat in a skillet over medium heat.
- Add onion and garlic; cook until soft.
- Stir in tomato paste, broth, salt, and pepper.
- Add peas, carrots, and corn. Simmer 5 minutes.
- Assemble
- Preheat oven to 400°F (205°C).
- Spread meat mixture in a baking dish.
- Spoon mashed potatoes on top and spread evenly.
- Bake
- Bake for 20–25 minutes until bubbly and lightly golden on top.
- Serve
- Let cool for a few minutes before serving.
Tips
- For extra flavor, sprinkle a little shredded cheese on top.
- Use a fork to make ridges in the potatoes so they crisp up nicely.
