Walking Taco Bake

Ingredients (Serves 4–6)

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, salt)
  • 1 cup salsa
  • 1 can corn, drained (optional)
  • 1 can black beans, drained and rinsed (optional)
  • 2 cups tortilla chips, crushed
  • 1½ cups shredded cheddar or Mexican blend cheese
  • Optional toppings: sour cream, diced tomatoes, sliced olives, green onions, jalapeños

Instructions

  1. Cook the beef
    • In a skillet, brown ground beef over medium heat. Drain excess fat.
    • Stir in taco seasoning and salsa. Simmer 2–3 minutes.
    • Add corn and black beans if using.
  2. Assemble the bake
    • Preheat oven to 350°F (175°C).
    • In a greased baking dish, layer:
      1. Crushed tortilla chips
      2. Taco meat mixture
      3. Cheese
    • Repeat layers if desired, finishing with cheese on top.
  3. Bake
    • Bake uncovered for 15–20 minutes until cheese is melted and bubbly.
  4. Serve
    • Top with sour cream, tomatoes, green onions, or any favorite taco toppings.

Tips

  • For extra crunch, sprinkle a few extra crushed chips on top before baking.
  • Make it vegetarian by swapping beef for a mix of beans and veggies.
  • This works well as a meal prep dish—store leftovers in the fridge and reheat.
