Simple Egg Sandwich

Ingredients (Serves 1–2)

  • 2 slices bread, toasted (or English muffin, bagel, croissant)
  • 1–2 eggs
  • 1–2 slices cheese (cheddar, American, or your favorite)
  • 1 tsp butter or oil
  • Salt & pepper to taste
  • Optional: bacon, ham, avocado, tomato, spinach, hot sauce, mayo, or mustard

Instructions

  1. Cook the eggs
    • Fried egg: Heat butter in a skillet over medium. Crack egg, cook until whites are set and yolk is to your liking (sunny side up, over easy, or over hard).
    • Scrambled: Beat eggs with salt and pepper. Cook in butter over medium, stirring gently until just set.
  2. Toast the bread
    • Lightly butter and toast slices or heat in a skillet for extra flavor.
  3. Assemble the sandwich
    • Place cooked egg on bread.
    • Add cheese (it melts best if egg is hot).
    • Add optional toppings: bacon, tomato, avocado, spinach, or condiments.
    • Top with second slice of bread and press gently.
  4. Serve
    • Slice in half and enjoy warm.

Tips

  • For extra gooey cheese, cover the pan with a lid for 30 seconds after adding cheese.
  • Microwave hack: Scramble egg, place on toast, and microwave 20–30 seconds for a fast version.
  • Add herbs like chives or parsley for a flavor boost.
