Ingredients

Pastry

  • 2 cups milk
  • 1/2 cup granulated sugar
  • 4 egg yolks
  • 1/4 cup cornstarch
  • 2 tbsp unsalted butter
  • 2 tsp vanilla extract or vanilla bean

Optional Topping

  • Chocolate glaze or melted dark chocolate (for traditional marbling)

Instructions

1. Bake the puff pastry

  • Preheat oven to 400°F (205°C).
  • Roll puff pastry slightly thinner.
  • Place between two parchment-lined baking sheets (this keeps it flat).
  • Bake 20–25 minutes until golden and crisp.
  • Cool completely, then cut into 3 equal rectangles.

2. Make the pastry cream

  • Heat milk and half the sugar until steaming.
  • Whisk egg yolks, remaining sugar, and cornstarch until smooth.
  • Slowly whisk hot milk into egg mixture.
  • Return to saucepan and cook over medium heat, whisking, until thick.
  • Remove from heat; stir in butter and vanilla.
  • Chill until completely cool.

3. Assemble

  • Place one pastry layer on a plate.
  • Spread an even layer of pastry cream.
  • Add second pastry layer and more cream.
  • Top with final pastry layer.

4. Finish the top

  • Dust with powdered sugar or
  • Spread white icing and drizzle chocolate, then drag a toothpick for classic marbled design.

  • Pastry must be fully cool and crisp before assembly.
  • Chill assembled pastry 30 minutes before slicing.
