  • 1 small onion, diced

  • 1 cup shredded mozzarella (optional for extra gooeyness)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk

  • ½ tsp paprika or smoked paprika (optional)
  • 2 tbsp butter or oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook sausage: In a skillet, cook sausage over medium heat until browned. Drain excess fat. Add onion and garlic; sauté 3–4 minutes until softened.
  3. Mix casserole ingredients: In a large bowl, combine cooked sausage mixture, diced potatoes, cheeses, soup, milk, salt, pepper, and paprika. Stir until evenly mixed.
  4. Pour into baking dish: Spread mixture evenly. Top with extra cheese if desired.
  5. Bake: 40–50 minutes, until potatoes are tender and cheese is bubbly and golden on top.
  6. Serve hot: Optionally garnish with chopped green onions or parsley.
