Instructions

  1. Make pudding: In a bowl, whisk pudding mix with cold milk until thickened (per package instructions, usually 2 min).
  2. Fold in whipped topping: Gently fold 1 ½ cups of whipped topping into the pudding until smooth. Reserve the rest for topping.
  3. Layer cake: In a 9×9-inch dish, place a layer of graham crackers (or wafers). Spread 1/3 of the pudding mixture over the crackers. Repeat layers 2 more times, ending with pudding on top.
  4. Top: Spread the remaining whipped topping over the top layer. Sprinkle chopped pistachios on top for garnish.
  5. Chill: Refrigerate at least 4 hours or overnight so the cookies soften and the layers meld.
