Slow Cooker Pepper Steak

Ingredients

  • 1½–2 lb beef sirloin or flank steak, thinly sliced
  • 2 bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • ΒΎ cup beef broth
  • β…“ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger (or fresh, if you have it)
  • Black pepper to taste

Instructions

  1. Prep beef
    • Place sliced beef in the slow cooker.
  2. Add veggies
    • Add bell peppers, onion, and garlic on top.
  3. Make sauce
    • Whisk broth, soy sauce, brown sugar, ginger, black pepper, and cornstarch.
    • Pour over everything.
  4. Cook
    • Cover and cook:
      • Low: 6–7 hours
      • High: 3–4 hours
    • Stir once if possible.
  5. Serve
    • Serve hot over rice or noodles.

Tips

  • Slice beef against the grain for tenderness.
  • For thicker sauce, stir and let cook uncovered 10–15 minutes at the end.
  • Add mushrooms if you like.
