  • 1 tbsp butter or oil

Instructions

  1. Crack eggs: In a bowl, whisk eggs with milk (if using), salt, and pepper until smooth and slightly frothy.
  2. Heat pan: Place a nonstick skillet over medium-low heat and add butter or oil. Let it melt but not brown.
  3. Cook eggs slowly: Pour in eggs. Let them sit for a few seconds, then gently stir with a spatula, pushing the eggs from edges to center.
  4. Keep stirring gently: Continue stirring occasionally until eggs are mostly set but still slightly soft.
  5. Remove from heat: Eggs will continue cooking slightly from residual heat, so take them off the stove just before they look fully firm.
  6. Serve immediately.
