  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning

Instructions

1. Cook pasta

  • Boil pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.

2. Cook chicken

  • Season chicken slices with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken 2–3 minutes per side until golden and cooked through. Remove and set aside.

3. Sauté mushrooms

  • In the same skillet, melt butter.
  • Add mushrooms and cook 5 minutes until browned.
  • Add garlic and cook 30 seconds until fragrant.

4. Make the Marsala cream sauce

  • Pour in Marsala wine to deglaze the pan, scraping up any browned bits.
  • Simmer 2 minutes until slightly reduced.
  • Stir in heavy cream, chicken broth, Italian seasoning, and Parmesan. Simmer 3–5 minutes until thickened.

5. Combine

  • Return chicken to the pan.
  • Add cooked pasta and toss to coat.
  • Use reserved pasta water if you want to thin the sauce slightly.

6. Serve

  • Garnish with parsley and extra Parmesan. Serve immediately.
