  • 2 lbs (900 g) potatoes, peeled and chopped
  • 4 tbsp butter
  • ½ cup milk (or cream for richer potatoes)
  • Salt and pepper, to taste
  • Optional: ¼ cup grated cheddar cheese for topping

Instructions

1. Make the mashed potatoes:

  1. Boil potatoes in salted water until tender, about 15–20 minutes.
  2. Drain and mash with butter, milk, salt, and pepper. Set aside.

2. Cook the filling:

  1. Heat olive oil in a pan over medium heat.
  2. Sauté onions and garlic until soft.
  3. Add carrots and cook for 3–4 minutes.
  4. Add ground lamb; cook until browned.
  5. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  6. Pour in stock and simmer for 10–15 minutes until slightly thickened.
  7. Stir in peas at the end.

3. Assemble the pie:

  1. Preheat oven to 400°F (200°C).
  2. Spoon the meat mixture into a baking dish.
  3. Spread mashed potatoes on top, smoothing with a spatula or fork.
  4. Optional: sprinkle grated cheddar over the top.

4. Bake:

  1. Bake for 20–25 minutes until the top is golden and slightly crisp.
  2. Let rest 5 minutes before serving.

  • Crispier top: Run under the broiler for 2–3 minutes at the end.
  • Extra flavor: Mix a little Dijon mustard into the mashed potatoes.
