French Yogurt Cake
Ingredients
- 1 cup plain yogurt (preferably whole milk yogurt)
- 1 cup sugar
- 3 large eggs
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- Zest of 1 lemon or orange (optional)
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
Instructions
- Prep
- Preheat oven to 350°F (175°C).
- Grease and flour a 9-inch round or loaf pan.
- Mix wet ingredients
- In a bowl, whisk yogurt, sugar, eggs, oil, and vanilla (and zest if using) until smooth.
- Add dry ingredients
- In another bowl, whisk flour, baking powder, and salt.
- Gently fold dry ingredients into wet ingredients until combined.
- Bake
- Pour batter into pan.
- Bake 35–45 minutes (loaf may take slightly longer), until a toothpick comes out clean.
- Cool
- Let cool 10 minutes in pan, then remove and cool completely on a wire rack.
Tips
- For extra flavor, brush top with a little lemon or orange glaze after baking.
- Can add fresh berries or chocolate chips to the batter.
- The cake is naturally light and moist because of the yogurt.
