Here are easy Cherry Pie Bars—all the flavor of cherry pie, but much simpler 🍒🥧

Cherry Pie Bars

Ingredients

Crust & Topping

  • 1 cup unsalted butter, softened
  • 1½ cups sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 3 cups all-purpose flour
  • ½ tsp salt

Filling

  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 175°C / 350°F. Grease or line a 9×13-inch pan.
  2. Cream butter and sugar until light and fluffy. Mix in vanilla and eggs.
  3. Add flour and salt, mixing just until combined.
  4. Spread ⅔ of the batter evenly into the pan.
  5. Top with cherry filling, spreading gently.
  6. Drop spoonfuls of remaining batter over the cherries.
  7. Bake 35–40 minutes until lightly golden.
  8. Cool completely before slicing into bars.

Optional Glaze

Mix:

  • 1 cup powdered sugar
  • 2 tbsp milk or lemon juice
    Drizzle over cooled bars.

Tips & Variations

  • Add almond extract (½ tsp) for a bakery-style flavor.
  • Use blueberry or apple pie filling instead.
  • Serve warm with vanilla ice cream 🍨
