Chicken Pot Pie Pasta

Serves: 4–6

Ingredients:

  • 12 oz (340g) pasta (penne, rotini, or shells work best)
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works perfectly)
  • 1 cup frozen peas and carrots (or mixed veggies)
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk (whole or 2% for creaminess)
  • 1 tsp dried thyme
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar or mozzarella (optional, for extra cheesy goodness)
  • Optional: 1/4 tsp paprika or dash of hot sauce for a little kick

Instructions:

  1. Cook pasta: Boil pasta according to package instructions. Drain and set aside.
  2. Make sauce: In a large skillet or pot, melt butter over medium heat. Add onion and cook until soft, 3–4 minutes. Add garlic and cook 30 seconds more.
  3. Thicken: Sprinkle flour over onions/garlic and stir to coat. Cook 1–2 minutes to remove the raw flour taste.
  4. Add liquids: Slowly whisk in chicken broth and milk until smooth. Bring to a simmer and cook until slightly thickened, about 3–5 minutes.
  5. Add chicken & veggies: Stir in cooked chicken, peas and carrots, thyme, salt, pepper, and paprika/hot sauce if using. Cook until heated through.
  6. Combine with pasta: Toss in cooked pasta and mix until everything is coated in that creamy sauce.
  7. Optional cheesy finish: Sprinkle shredded cheese over the top, cover for 2 minutes to melt, and serve.

💡 Tips:

  • For an even creamier sauce, swap half the milk for heavy cream.
  • You can add a little puff pastry or biscuit topping for a “true pot pie” vibe—just bake it in the oven at 375°F (190°C) for 10–12 minutes on top.
  • Leftovers reheat beautifully, just add a splash of milk to loosen the sauce.
