Cherry pie bars

Ohhh these are a classic crowd-pleaser 😍
Cherry pie bars have that buttery crust, sweet-tart cherry filling, and a simple glaze on top—way easier than making an actual pie.


Cherry Pie Bars

Makes: 24 bars


Crust & Topping

Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tsp salt

Filling

  • 2 cans (21 oz each) cherry pie filling

Glaze (Optional but Recommended)

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • 1/2 tsp vanilla or almond extract

Instructions

  1. Preheat oven: 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Make batter: Cream butter and sugar until fluffy. Beat in vanilla and eggs.
  3. Add dry ingredients: Mix in flour and salt until just combined.
  4. Layer:
    • Spread ¾ of the batter into the baking dish.
    • Spoon cherry pie filling evenly over batter.
    • Drop remaining batter in small dollops over cherries.
  5. Bake: 40–45 minutes, until golden and set.
  6. Cool completely.
  7. Glaze: Whisk glaze ingredients and drizzle over cooled bars.

Tips

  • Almond extract in the glaze gives big bakery energy.
  • Let bars cool fully before cutting—clean slices matter.
  • Store covered at room temp 1 day or refrigerate up to 4 days.
