Cheesy Hamburger Potato Casserole

Serves: 6–8


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3–4 cups potatoes, thinly sliced (russet or Yukon gold)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup milk
  • 1½–2 cups shredded cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Optional: paprika for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. Brown beef with onion in a skillet. Drain excess fat.
  3. Mix sauce: combine soup, milk, salt, pepper, and garlic powder.
  4. Layer casserole:
    • Half the potatoes
    • Half the beef
    • Half the soup mixture
    • Half the cheese
      Repeat layers.
  5. Cover with foil and bake 60 minutes.
  6. Uncover, sprinkle paprika if desired, and bake 15–20 minutes more until potatoes are tender and cheese is bubbly.
  7. Rest 10 minutes before serving.

Tips

  • Slice potatoes thin so they cook evenly.
  • If potatoes aren’t tender, cover and bake another 10–15 minutes.
  • Let it rest—this helps it set up nicely.
