🍫 Chocolate Tarts (Makes 6–8 mini tarts)

Ingredients

For the crust

  • 1½ cups crushed graham crackers or digestive biscuits
  • ¼ cup sugar
  • 6 tbsp butter, melted

For the filling

  • 8 oz (225 g) semi-sweet chocolate, chopped
  • 1 tsp vanilla extract

Instructions

1. Make the crust

  1. Mix crushed crackers, sugar, and melted butter.
  2. Press firmly into tart pans or a muffin tin for mini tarts.
  3. Chill in fridge for 15–20 minutes to set.

2. Make the chocolate filling

  1. Heat cream in a small saucepan until just simmering (don’t boil).
  2. Pour over chopped chocolate in a bowl. Let sit 1–2 minutes.
  3. Stir until smooth and glossy.
  4. Stir in vanilla (and optional salt/espresso).

3. Assemble

  • Pour chocolate filling into prepared crusts.
