Ingredients
- 2 cups mashed potatoes (cold works best)
- 1 large egg
- ½ cup shredded cheese (cheddar, Colby-Jack, or Parmesan)
- 2 tbsp milk or cream
- 2 tbsp melted butter or oil
- Salt & pepper to taste
Optional add-ins
- Cooked bacon bits
- Chives or green onions
- Garlic powder
- Sour cream (2 tbsp for extra richness)
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin well.
- In a bowl, mix mashed potatoes, egg, cheese, milk, butter, and seasoning.
- Fold in any add-ins.
- Spoon into muffin cups, filling almost to the top.
- Bake 25–30 minutes until golden on top.
- Cool 5 minutes, then remove.
Tips
- Sprinkle extra cheese on top before baking for crispy edges.
- For extra crunch, brush the muffin tin with butter.
