Asian Coleslaw Recipe

Ingredients (serves 4–6):

For the slaw:

  • 4 cups shredded cabbage (green, red, or a mix)
  • 1 cup shredded carrots
  • ½ cup thinly sliced red bell pepper
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro (optional)
  • 2–3 tbsp toasted sesame seeds

For the dressing:

  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1–2 tsp honey or sugar
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp red pepper flakes (optional for heat)

Instructions

  1. Prepare the veggies:
    • In a large bowl, combine cabbage, carrots, bell pepper, green onions, and cilantro.
  2. Make the dressing:
    • Whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes.
  3. Toss the salad:
    • Pour dressing over the veggies and toss until evenly coated.
  4. Add sesame seeds:
    • Sprinkle toasted sesame seeds on top for crunch.
  5. Chill and serve:
    • Let sit 15–20 min in the fridge for flavors to meld. Serve cold.
