Ooooh, lemon & garlic chicken bites are tangy, garlicky, and super easy to make! Perfect as a snack, appetizer, or main dish. Here’s a simple recipe:


Ingredients (serves 2–3)

  • 1 lb (450 g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2–3 cloves garlic, minced
  • 1 lemon (juice + zest)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional for a little smoky flavor)
  • Optional: fresh parsley for garnish

Instructions

  1. Marinate the chicken:
    In a bowl, mix the chicken bites with olive oil, garlic, lemon juice, lemon zest, salt, pepper, and paprika. Let it sit for at least 15–20 minutes (or up to 2 hours in the fridge for more flavor).
  2. Cook the chicken:
    • Heat a skillet over medium-high heat.
    • Add the chicken pieces (with a bit of the marinade) and cook for 5–7 minutes, turning occasionally, until golden brown and fully cooked (internal temp ~165°F / 74°C).
  3. Optional finishing touch:
    Squeeze a bit more fresh lemon juice over the cooked chicken and sprinkle chopped parsley on top.
  4. Serve:
    Serve hot as a snack with dipping sauce, over rice, or with roasted veggies.

💡 Tips:

  • For extra crispiness, you can lightly dust the chicken in flour or cornstarch before cooking.
  • Adding a teaspoon of honey to the marinade gives a subtle sweet & tangy kick.
