🍲 Crock Pot Chicken Noodle Soup

Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 6 cups chicken broth
  • 2 cups water
  • 2 carrots (sliced)
  • 2 celery stalks (chopped)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt & black pepper (to taste)
  • 2 cups egg noodles
  • Optional: fresh parsley + lemon juice for serving

Instructions

1. Add to Crock Pot

Place chicken, carrots, celery, onion, garlic, broth, water, and spices into your slow cooker.

2. Cook

  • Low: 6–7 hours
  • High: 3–4 hours

3. Shred Chicken

Remove chicken, shred with forks, then return it to the pot.

4. Add Noodles

Stir in egg noodles and cook:

  • High: 20–30 minutes (until tender)

5. Finish & Serve

Taste and adjust seasoning. Add fresh parsley or a squeeze of lemon if you like.


Tips

  • Add a bay leaf for deeper flavor (remove before serving)
  • Use rotisserie chicken for a faster version (add near the end)
