Skirt steak

Skirt steak is a thin, long cut of beef from the plate (lower chest). It’s known for big beefy flavor and cooks very fast.

Quick facts

  • Very flavorful, but has long muscle fibers β†’ can be chewy if sliced wrong
  • Best cooked hot and fast (grill, cast iron, broiler)
  • Always slice against the grain

Best ways to cook it

Simple go-to method

  1. Season well with salt (or marinate 30 min–2 hrs).
  2. Heat pan or grill until very hot.
  3. Cook ~2–3 minutes per side (medium-rare is ideal).
  4. Rest 5 minutes.
  5. Slice thin against the grain.

  • Soy sauce + brown sugar + garlic
