Almond Oatmeal Cookies

Makes: ~24 cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (key flavor!)
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 cups old-fashioned oats
  • 3/4 cup sliced or chopped almonds

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  2. Cream butter & sugars until light and fluffy.
  3. Beat in egg, vanilla, and almond extract.
  4. Mix in flour, baking soda, and salt just until combined.
  5. Fold in oats and almonds.
  6. Scoop 1½-tbsp dough balls onto baking sheet, spaced apart.
  7. Bake 10–12 minutes, until edges are golden and centers are soft.
  8. Cool on pan 5 minutes, then transfer to a rack.

Tips for Perfect Cookies

  • Almond extract is strong—don’t overdo it.
  • For chewier cookies, slightly underbake.
  • Toast almonds beforehand for deeper flavor.
