Here’s a classic Atlantic Beach Pie recipe 🥧
It’s famous for its salty–sweet cracker crust and bright lemon-lime filling—simple and really good.
Atlantic Beach Pie
Ingredients
Crust
- 1½ sleeves saltine crackers (about 60 crackers)
- ½ cup sugar
- ½ cup unsalted butter, melted
Filling
- 1 (14-oz) can sweetened condensed milk
- ½ cup fresh lemon juice
(or half lemon, half lime for traditional flavor) - 4 large egg yolks
Topping (optional but recommended)
- Whipped cream
- Lemon or lime zest
Instructions
- Make the crust
- Preheat oven to 350°F (175°C).
- Crush crackers finely (food processor or bag + rolling pin).
- Mix cracker crumbs, sugar, and melted butter.
- Press firmly into a pie pan (bottom and sides).
- Bake 15 minutes, then let cool slightly.
- Make the filling
- Whisk condensed milk and egg yolks until smooth.
- Stir in citrus juice (it will thicken).
- Bake
- Pour filling into warm crust.
- Bake 15–18 minutes, until just set.
- Cool
- Let cool completely, then chill at least 2 hours.
- Serve
- Top with whipped cream and zest before serving.
Tips
- The pie should jiggle slightly in the center when done.
- Saltines are traditional—don’t swap them out.
- Keeps well in the fridge for 2–3 days.
