Atlantic Beach pie

Here’s a classic Atlantic Beach Pie recipe 🥧
It’s famous for its salty–sweet cracker crust and bright lemon-lime filling—simple and really good.


Atlantic Beach Pie

Ingredients

Crust

  • 1½ sleeves saltine crackers (about 60 crackers)
  • ½ cup sugar
  • ½ cup unsalted butter, melted

Filling

  • 1 (14-oz) can sweetened condensed milk
  • ½ cup fresh lemon juice
    (or half lemon, half lime for traditional flavor)
  • 4 large egg yolks

Topping (optional but recommended)

  • Whipped cream
  • Lemon or lime zest

Instructions

  1. Make the crust
    • Preheat oven to 350°F (175°C).
    • Crush crackers finely (food processor or bag + rolling pin).
    • Mix cracker crumbs, sugar, and melted butter.
    • Press firmly into a pie pan (bottom and sides).
    • Bake 15 minutes, then let cool slightly.
  2. Make the filling
    • Whisk condensed milk and egg yolks until smooth.
    • Stir in citrus juice (it will thicken).
  3. Bake
    • Pour filling into warm crust.
    • Bake 15–18 minutes, until just set.
  4. Cool
    • Let cool completely, then chill at least 2 hours.
  5. Serve
    • Top with whipped cream and zest before serving.

Tips

  • The pie should jiggle slightly in the center when done.
  • Saltines are traditional—don’t swap them out.
  • Keeps well in the fridge for 2–3 days.
