Ingredients

  • 3–4 medium yellow squash, sliced into ¼-inch rounds
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or thyme)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare squash: Slice the yellow squash into rounds about ¼ inch thick.
  3. Season: In a large bowl, toss the squash slices with olive oil, garlic powder, onion powder, salt, and pepper.
  4. Add Parmesan: Sprinkle the grated Parmesan over the squash and toss gently to coat evenly.
  5. Bake: Spread the squash in a single layer on the baking sheet. Bake for 15–20 minutes, flipping halfway through, until golden and slightly crispy.

  • For extra crunch, broil for 1–2 minutes at the end, keeping a close eye so it doesn’t burn.
