Ingredients

Banana bread base:

  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt

Cobbler topping:

  • ½ cup brown sugar
  • ¾ cup hot water
  • 1 tbsp butter, cut into small pieces

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Make the batter:
    In a bowl, mix mashed bananas, sugar, melted butter, egg, and vanilla.
    Stir in flour, baking powder, baking soda, cinnamon, and salt until just combined.
  3. Spread batter evenly in the prepared baking dish.
  4. Add topping:
    Sprinkle brown sugar evenly over the batter.
    Carefully pour hot water over the top (do not stir).
    Dot with small butter pieces.
  5. Bake for 40–45 minutes, until the top is golden and the center is set. A caramel-like sauce will form underneath.
