Absolutely! Here’s a hearty, flavorful beef chili recipe that’s perfect for warming up and can be made on the stovetop or in a slow cooker.


Ingredients (Serves 4–6)

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 can (14.5 oz / 400g) diced tomatoes
  • 1 can (15 oz / 425g) kidney beans, drained and rinsed
  • 1 can (8 oz / 225g) tomato sauce

  • 1 cup beef broth or water
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika (optional, for smoky flavor)
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • Olive oil, for cooking

Optional toppings: shredded cheese, sour cream, chopped green onions, tortilla chips, avocado


Instructions

  1. Cook the beef
    • Heat a large pot over medium heat. Add a splash of olive oil.
    • Add ground beef and cook until browned, breaking it up with a spoon. Remove excess fat if needed.
  2. Sauté the veggies
    • In the same pot, add onion, bell pepper, and garlic. Cook 3–5 minutes until soft and fragrant.
  3. Add spices
    • Stir in chili powder, cumin, smoked paprika, cayenne, salt, and black pepper. Cook 1–2 minutes to toast the spices.
  4. Add liquids and beans
    • Stir in diced tomatoes, tomato sauce, tomato paste, and beef broth. Mix well.
    • Add kidney beans. Bring to a gentle boil, then reduce heat to low.
  5. Simmer
    • Cover and let simmer for at least 20–30 minutes (longer if you want richer flavor, up to 1–2 hours). Stir occasionally.
  6. Taste and adjust
    • Taste your chili and add more salt, pepper, or spices as needed.
  7. Serve
    • Serve hot with optional toppings like shredded cheese, sour cream, or avocado. Cornbread on the side is a classic match!

  • For extra depth, add 1 tsp cocoa powder or a small square of dark chocolate.
  • For thicker chili, mash a few beans or simmer uncovered at the end.
  • You can make it ahead; chili actually tastes better the next day.
