Beef Stew with Vegetables and Potatoes

Ingredients (Serves 4–6)

  • 2 lbs beef chuck, cut into 1–1.5 inch cubes
  • Salt & black pepper
  • 3 tbsp all-purpose flour
  • 2–3 tbsp olive oil or vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, can use extra broth)
  • 3 large carrots, cut into chunks
  • 3 medium potatoes, peeled and cubed
  • 2 stalks celery, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Optional: 1 cup frozen peas, added near the end

Instructions

1️⃣ Prep the beef

  • Season beef cubes with salt and pepper, then toss in flour until lightly coated.
  • Heat oil in a large pot or Dutch oven over medium-high heat.
  • Brown beef in batches for 2–3 minutes per side. Remove and set aside.

2️⃣ Sauté aromatics

  • In the same pot, sauté onion and garlic 2–3 minutes until soft and fragrant.

3️⃣ Deglaze & simmer

  • Pour in red wine (or a bit of broth) to scrape up browned bits from the pot.
  • Return beef to pot. Add beef broth, thyme, rosemary, and bay leaf.
  • Bring to a boil, then reduce heat to low, cover, and simmer 1.5–2 hours until beef is tender.

4️⃣ Add vegetables

  • Add carrots, potatoes, and celery. Cover and simmer 30–40 minutes until vegetables are tender.
  • Optional: stir in frozen peas during the last 5 minutes.

5️⃣ Finish & serve

  • Remove bay leaf. Taste and adjust seasoning.
  • Serve hot with crusty bread or over rice.

Tips

  • Thicken the stew: mix 1–2 tbsp cornstarch with water and stir in at the end if you want a thicker broth.
  • Flavor boost: add a splash of Worcestershire sauce or soy sauce.
  • Slow cooker version: Brown beef first, then combine all ingredients in a slow cooker and cook 6–8 hours on low.
