  • 1 egg

Instructions

  1. Preheat oven
    • Preheat to 375°F (190°C). Grease a 9×9-inch (23×23 cm) baking dish.
  2. Cook the beef mixture
    • In a skillet over medium heat, brown ground beef. Drain excess fat.
    • Add onion, bell pepper, and garlic; cook until softened (3–5 minutes).
    • Stir in corn, cream soup, chili powder, salt, pepper, and 1 cup shredded cheese. Mix well.
    • Pour the beef mixture into the prepared baking dish.
  3. Make the cornbread topping
    • In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.
    • In another bowl, whisk milk, melted butter, and egg.
    • Pour wet ingredients into dry ingredients and stir until just combined.
  4. Top the beef mixture
    • Spoon the cornbread batter evenly over the beef mixture. Sprinkle remaining cheese on top if desired.
  5. Bake
    • Bake 25–30 minutes, or until the cornbread is golden and a toothpick comes out clean.
  6. Serve
    • Let sit 5 minutes before serving. Scoop portions with some beef and cornbread together for each serving.
