🥗 Roasted Beetroot with Garlic & Herbs

Ingredients (serves 4)

  • 4 medium beetroots, peeled and cut into wedges
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme or rosemary (optional)

Instructions
