Blueberry Cream Cheese Bread

Ingredients

For the bread:

  • 2 ½ cups (315 g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (240 ml) sour cream or plain yogurt
  • 1 ½ cups (150 g) fresh or frozen blueberries

For the cream cheese swirl:

  • 8 oz (225 g) cream cheese, softened
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract

Optional topping:

  • 2 tbsp coarse sugar for sprinkling

Instructions

  1. Preheat oven & prepare pan
    • Preheat to 350°F (175°C).
    • Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Make cream cheese filling
    • In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
  3. Prepare the bread batter
    • In a medium bowl, whisk flour, baking powder, baking soda, and salt.
    • In a large bowl, cream butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then vanilla.
    • Mix in sour cream.
    • Gradually fold in dry ingredients until just combined.
    • Gently fold in blueberries.
  4. Layer the bread and cream cheese
    • Spread half of the batter in the pan.
    • Spoon cream cheese mixture over the batter.
    • Dollop the remaining batter on top and swirl lightly with a knife.
  5. Bake
    • Sprinkle coarse sugar on top if desired.
    • Bake 50–60 minutes, or until a toothpick inserted comes out clean.
    • If the top browns too fast, cover loosely with foil.
  6. Cool & serve
    • Let bread cool 15 minutes in the pan, then remove to a wire rack.
    • Slice and enjoy—warm with butter or as is!

💡 Tips:

  • Toss blueberries in a teaspoon of flour before folding in to prevent them from sinking.
  • For extra flavor, add a pinch of lemon zest to the batter.
