Butternut squash with feta 🧡🧀—sweet, savory, and a little tangy. This combo is simple but so good, whether as a side dish or a main with grains.


Roasted Butternut Squash with Feta

Ingredients (Serves 4)

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tbsp olive oil
  • Salt & black pepper
  • ½ tsp smoked paprika or cinnamon (optional)
  • ½ cup crumbled feta cheese
  • Optional add-ins: red onion slices, spinach, chickpeas

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Season squash
    Toss squash with olive oil, salt, pepper, and paprika or cinnamon.
  3. Roast
    Spread on a baking sheet in a single layer. Roast 25–30 minutes, flipping halfway, until tender and caramelized.
  4. Add feta
    Sprinkle feta over hot squash. Return to oven 5 minutes just to soften feta.
  5. Serve
    Finish with fresh herbs (parsley or thyme) if desired.
