🌶️🍤 Cajun Shrimp & Sausage Stuffed Cabbage

Ingredients (Serves 4–6)

For the cabbage:

  • 1 large green cabbage
  • Water for boiling
  • 1 tsp salt

For the filling:

  • 1/2 lb (225 g) raw shrimp, peeled, chopped
  • 1/2 lb (225 g) smoked sausage (like andouille), finely diced
  • 1 cup cooked rice
  • 1/2 cup onion, finely diced
  • 1/2 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning (adjust to taste)
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

For the sauce:

  • 1 1/2 cups crushed tomatoes
  • 1/2 cup tomato sauce
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp sugar (optional)
  • Salt & pepper to taste

🔪 Instructions

1️⃣ Prepare the Cabbage

  • Bring a large pot of salted water to a boil.
  • Remove the cabbage core.
  • Carefully peel off 10–12 large leaves.
  • Boil leaves 2–3 minutes until softened. Drain and set aside.

2️⃣ Make the Filling

  • Heat olive oil in a skillet over medium heat.
  • Sauté onion and bell pepper 3–4 minutes.
  • Add garlic and cook 30 seconds.
  • Stir in sausage; cook 3–4 minutes.
  • Add shrimp, Cajun seasoning, paprika, and pepper. Cook just until shrimp turns pink (about 2 minutes).
  • Remove from heat and mix in cooked rice.

3️⃣ Make the Sauce

  • Combine crushed tomatoes, tomato sauce, Cajun seasoning, sugar, salt, and pepper.

4️⃣ Assemble Rolls

  • Lay cabbage leaf flat.
  • Place 2–3 tbsp filling in center.
  • Fold sides inward and roll tightly.
  • Place seam-side down in a baking dish.

5️⃣ Bake

  • Pour sauce over cabbage rolls.
  • Cover with foil.
  • Bake at 375°F (190°C) for 30–35 minutes.
