Here’s a simple and tasty Cheesy Carrot Flatbreads recipe 🥕🧀
Soft, flavorful flatbreads with a hint of sweetness from carrots and melty cheese.


Cheesy Carrot Flatbreads

Ingredients (makes 4 flatbreads)

  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • 1 large egg
  • ¼ cup milk
  • ½–¾ cup shredded cheese (cheddar, mozzarella, or your choice)
  • 2 tablespoons olive oil (for cooking)
  • Optional: fresh herbs like parsley, chives, or thyme

Instructions

  1. Mix dry ingredients
    • In a bowl, combine flour, baking powder, salt, pepper, and garlic powder if using.
  2. Mix wet ingredients
    • In another bowl, whisk egg and milk together.
  3. Combine
    • Add grated carrots and wet ingredients to dry ingredients.
    • Stir until a soft batter forms.
    • Fold in shredded cheese (reserve a little for topping).
  4. Cook flatbreads
    • Heat 1 tablespoon olive oil in a skillet over medium heat.
    • Scoop ¼ cup batter for each flatbread and spread slightly.
    • Cook 3–4 minutes per side until golden brown and cooked through.
    • Top with remaining cheese during the last minute of cooking and cover to melt.
  5. Serve
    • Serve warm as a snack, side, or light meal.

Tips

  • Add finely chopped onions or green onions for extra flavor.
  • Can sprinkle herbs or a pinch of paprika on top before serving.
  • For crispier flatbreads, cook a bit longer on low heat.
