Cherry Pie Bars
Ingredients
Crust & Topping
- 1 cup unsalted butter, softened
- 1½ cups sugar
- 1 tsp vanilla extract
- 4 large eggs
- 3 cups all-purpose flour
- ½ tsp salt
Filling
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat oven to 175°C / 350°F. Grease or line a 9×13-inch pan.
- Cream butter and sugar until light and fluffy. Mix in vanilla and eggs.
- Add flour and salt, mixing just until combined.
- Spread ⅔ of the batter evenly into the pan.
- Top with cherry filling, spreading gently.
- Drop spoonfuls of remaining batter over the cherries.
- Bake 35–40 minutes until lightly golden.
- Cool completely before slicing into bars.
Optional Glaze
Mix:
- 1 cup powdered sugar
- 2 tbsp milk or lemon juice
Drizzle over cooled bars.
Tips & Variations
- Add almond extract (½ tsp) for a bakery-style flavor.
- Use blueberry or apple pie filling instead.
- Serve warm with vanilla ice cream 🍨
