Ingredients
- 2 large chicken breasts (halved lengthwise)
- Salt & black pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (Italian-style or panko)
- ½ cup grated Parmesan cheese
- Olive oil (for frying)
- 1½ cups marinara sauce
- 1½ cups shredded mozzarella cheese
- Fresh basil or parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken with salt, pepper, garlic powder, and Italian seasoning.
- Set up dredging stations:
flour → eggs → breadcrumbs mixed with Parmesan. - Coat chicken in flour, dip in egg, then press into breadcrumb mixture.
- Heat oil in a skillet over medium heat.
Pan-fry chicken 2–3 minutes per side until golden (not fully cooked). - Place chicken in a baking dish. Spoon marinara over each piece.
- Top with mozzarella.
- Bake 15–20 minutes, until chicken is cooked through and cheese is bubbly.
- Garnish with basil or parsley and serve.
