Here’s a low-carb Chicken, Spinach & Mushroom oven dish 🍗🥬

Ingredients
- 2–3 chicken breasts, cut into bite-size pieces
- 2 cups mushrooms, sliced
- 2–3 cups fresh spinach
- 2 cloves garlic, minced
- ½ cup heavy cream (or half-and-half for lighter)
- ¼ cup cream cheese, softened
- ½ cup shredded mozzarella or parmesan
- 1 tbsp olive oil or butter
- Salt, pepper, and Italian seasoning
Instructions
- Preheat oven to 375°F / 190°C.
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt & pepper and lightly brown (not fully cooked).
- Add mushrooms and garlic; cook 3–4 minutes until softened.
- Stir in spinach until just wilted.
- Lower heat and mix in cream, cream cheese, and seasoning until smooth.
- Transfer everything to a greased baking dish.
- Sprinkle cheese evenly on top.
- Bake uncovered 25–30 minutes until bubbly and chicken is cooked through.
- Rest 5 minutes before serving.
