Chicken spinach and mushroom low carb oven dish

Here’s a low-carb Chicken, Spinach & Mushroom oven dish 🍗🥬
Creamy, filling, and simple—great for weeknights.

Ingredients

  • 2–3 chicken breasts, cut into bite-size pieces
  • 2 cups mushrooms, sliced
  • 2–3 cups fresh spinach
  • 2 cloves garlic, minced
  • ½ cup heavy cream (or half-and-half for lighter)
  • ¼ cup cream cheese, softened
  • ½ cup shredded mozzarella or parmesan
  • 1 tbsp olive oil or butter
  • Salt, pepper, and Italian seasoning

Instructions

  1. Preheat oven to 375°F / 190°C.
  2. Heat olive oil in a skillet over medium heat.
    • Season chicken with salt & pepper and lightly brown (not fully cooked).
  3. Add mushrooms and garlic; cook 3–4 minutes until softened.
  4. Stir in spinach until just wilted.
  5. Lower heat and mix in cream, cream cheese, and seasoning until smooth.
  6. Transfer everything to a greased baking dish.
  7. Sprinkle cheese evenly on top.
  8. Bake uncovered 25–30 minutes until bubbly and chicken is cooked through.
  9. Rest 5 minutes before serving.

Optional Low-Carb Boosts

  • Add crispy bacon bits
  • Use Alfredo sauce instead of cream
  • Sprinkle red pepper flakes for heat
  • Add zucchini slices or broccoli florets

Serving Ideas

  • On its own (very filling)
  • Over cauliflower rice
