Chocolate-Covered Nut Clusters

Ingredients

  • 2 cups mixed nuts (peanuts, pecans, almonds, cashews—your call)
  • 12 oz chocolate (semi-sweet, milk, or dark)
  • Optional add-ins:
    • Pinch of sea salt
    • 1/2 tsp vanilla extract
    • 1/4 cup dried fruit (cranberries, raisins)

Instructions

  1. Prep: Line a baking sheet with parchment or wax paper.
  2. Melt chocolate:
    • Microwave in 30-second bursts, stirring each time, or
    • Melt gently over a double boiler.
  3. Mix: Stir nuts (and any add-ins) into melted chocolate until well coated.
  4. Scoop: Drop spoonfuls onto prepared sheet, forming small clusters.
  5. Set: Let cool at room temp or refrigerate 20–30 minutes until firm.
  6. Finish: Sprinkle lightly with sea salt if using.
