Chocolate mousse

Chocolate Mousse

Serves: 4

Ingredients:

  • 4 oz (115g) semi-sweet or dark chocolate, chopped
  • 2 tbsp unsalted butter
  • 2 large eggs, separated
  • 2 tbsp sugar
  • 1/2 cup (120ml) heavy cream
  • 1 tsp vanilla extract
  • Optional: pinch of salt, whipped cream, or chocolate shavings for garnish

Instructions:

  1. Melt chocolate: In a heatproof bowl over simmering water (double boiler) or in the microwave, melt chocolate and butter until smooth. Let it cool slightly.
  2. Whip egg whites: In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add sugar and beat until glossy stiff peaks form.
  3. Whip cream: In another bowl, whip heavy cream with vanilla until soft peaks form.
  4. Combine yolks & chocolate: Stir egg yolks into slightly cooled chocolate until smooth.
  5. Fold in: Gently fold whipped cream into chocolate mixture until mostly combined. Then carefully fold in egg whites until fully incorporated—keep it airy!
  6. Chill: Spoon into serving glasses or bowls. Chill for at least 2 hours until set.
  7. Serve: Top with whipped cream, chocolate shavings, or berries if desired.

  • Make sure chocolate isn’t too hot when adding egg yolks or they’ll scramble.
  • For a richer flavor, add a splash of espresso or a liqueur like Grand Marnier.
  • Leftovers keep in the fridge for 2–3 days—perfect for make-ahead dessert.
