Homemade Cinnamon Bread

Ingredients

For the dough:

  • 3 1/4 cups (400 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast

  • 1 cup (240 ml) warm milk
  • 1/4 cup (60 g) unsalted butter, melted
  • 1 large egg

For the cinnamon swirl:

  • 1/2 cup (100 g) brown sugar
  • 2 tbsp cinnamon
  • 2 tbsp butter, softened

Optional glaze:

  • 1/2 cup powdered sugar
  • 1–2 tsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Prepare Dough:
    • In a bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
    • Mix in melted butter, egg, salt, and flour. Knead until smooth (~8–10 minutes).
  2. First Rise:
    Cover dough with a clean towel and let rise in a warm place for 1–2 hours, until doubled in size.
  3. Prepare Filling:
    Mix brown sugar and cinnamon. Set aside.
  4. Shape the Bread:
    • Roll dough into a rectangle (~9×12 inches).
    • Spread softened butter over the dough, then sprinkle cinnamon-sugar evenly.
    • Roll tightly into a log, pinch seams, and place in a greased loaf pan.
  5. Second Rise:
    Cover and let rise 30–45 minutes until puffed.
  6. Bake:
    Preheat oven to 350°F (175°C). Bake 30–35 minutes until golden brown. If the top browns too fast, cover loosely with foil.
  7. Optional Glaze:
    Mix powdered sugar, milk, and vanilla. Drizzle over warm bread.
  8. Cool & Serve:
    Let bread cool slightly before slicing. Perfect warm with butter or cream cheese!
