Cranberry orange pecan bread

Here’s a cranberry orange pecan bread recipe 🍊🍞
Moist, lightly sweet, and perfect for breakfast or dessert.


Cranberry Orange Pecan Bread

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup orange juice (fresh is best)
  • Zest of 1 orange
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or dried cranberries (chopped if large)
  • ½ cup chopped pecans

Instructions

  1. Prep
    • Preheat oven to 350°F (175°C).
    • Grease a loaf pan.
  2. Mix dry ingredients
    • In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  3. Mix wet ingredients
    • In another bowl, mix orange juice, zest, oil, egg, and vanilla.
  4. Combine
    • Stir wet ingredients into dry ingredients just until combined.
    • Fold in cranberries and pecans.
  5. Bake
    • Pour batter into pan.
    • Bake 50–60 minutes, until a toothpick comes out clean.
  6. Cool
    • Cool in pan 10 minutes, then transfer to a rack.

Optional Orange Glaze

Mix:

  • ½ cup powdered sugar
  • 1–2 tablespoons orange juice

Drizzle over cooled bread.


Tips

  • Toss cranberries in a little flour so they don’t sink.
  • Bread tastes even better the next day.
