Cranberry Orange Pecan Bread
Ingredients
- 2 cups all-purpose flour
- ¾ cup sugar
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup orange juice (fresh is best)
- Zest of 1 orange
- ⅓ cup vegetable oil or melted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or dried cranberries (chopped if large)
- ½ cup chopped pecans
Instructions
- Prep
- Preheat oven to 350°F (175°C).
- Grease a loaf pan.
- Mix dry ingredients
- In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- Mix wet ingredients
- In another bowl, mix orange juice, zest, oil, egg, and vanilla.
- Combine
- Stir wet ingredients into dry ingredients just until combined.
- Fold in cranberries and pecans.
- Bake
- Pour batter into pan.
- Bake 50–60 minutes, until a toothpick comes out clean.
- Cool
- Cool in pan 10 minutes, then transfer to a rack.
Optional Orange Glaze
Mix:
- ½ cup powdered sugar
- 1–2 tablespoons orange juice
Drizzle over cooled bread.
Tips
- Toss cranberries in a little flour so they don’t sink.
- Bread tastes even better the next day.
