Creamy Spinach and Mushroom Spaghetti
Ingredients
- 12 oz spaghetti
- 2 tablespoons olive oil
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 3 cups fresh spinach
- 1 cup heavy cream or half-and-half
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: red pepper flakes for heat
- Optional: fresh parsley for garnish
Instructions
- Cook pasta
- Cook spaghetti according to package instructions.
- Reserve ½ cup pasta water, then drain and set aside.
- Cook mushrooms
- Heat olive oil in a large skillet over medium heat.
- Add mushrooms and sauté 5–7 minutes until browned.
- Add garlic and cook 30 seconds more.
- Add spinach
- Stir in spinach until wilted.
- Make cream sauce
- Reduce heat to low.
- Stir in heavy cream and Parmesan cheese.
- Season with salt, pepper, and optional red pepper flakes.
- If sauce is too thick, add reserved pasta water a little at a time.
- Combine
- Toss cooked spaghetti with the sauce until well coated.
- Serve
- Plate pasta and garnish with extra Parmesan and parsley if desired.
Tips
- For extra richness, add a tablespoon of butter to the sauce.
- Can add cooked chicken or shrimp for protein.
