🥣 Crockpot Cowboy Soup (Slow Cooker)

🛒 Ingredients

  • 1 lb ground beef, browned and drained (Savoring The Good®)
  • 1 large onion, diced (Savoring The Good®)
  • 1 green bell pepper, diced (optional but tasty) (Savoring The Good®)
  • 1 can (~15 oz) kidney beans, drained (Savoring The Good®)
  • 1 can (~15 oz) black beans, drained (Savoring The Good®)
  • 1 can (~14.5 oz) diced tomatoes (Savoring The Good®)
  • 1 can (~15 oz) sweet corn, drained (Savoring The Good®)
  • 2 cups beef broth (more if you like it soupy) (Savoring The Good®)
  • 6 oz tomato paste (for richer flavor) (Savoring The Good®)
  • 1 Tbsp chili powder (Savoring The Good®)
  • 1 tsp paprika (Savoring The Good®)
  • 1 tsp cumin (Savoring The Good®)
  • 1 tsp minced garlic (Savoring The Good®)
  • Salt & pepper to taste (Savoring The Good®)
  • Optional: 1 Tbsp liquid smoke for smoky flavor (Savoring The Good®)

👩‍🍳 Instructions

  1. Brown the beef
In a skillet over medium heat, cook the ground beef until no longer pink. Drain off excess grease. (Savoring The Good®)
  2. Add to crockpot
Transfer the browned beef to the slow cooker. Add chopped onion, bell pepper, beans, tomatoes, corn, tomato paste, and beef broth. (Savoring The Good®)
  3. Season
Stir in chili powder, paprika, cumin, minced garlic, salt, and pepper. If you like a smoky vibe, add liquid smoke. (Savoring The Good®)
  4. Cook low and slow
Cover and cook on Low for 6–8 hours or High for 3–4 hours, until veggies are tender and flavors are melded. (Savoring The Good®)
  5. Serve
Give it a good stir, taste, and adjust seasonings. Serve hot with cornbread, crackers, or crusty bread. (Savoring The Good®)

🍽 Optional Add‑Ins

  • Diced potatoes or carrots for extra heartiness
  • A packet of taco seasoning or ranch mix for a flavor twist (creativescookery.com)
  • Toppings like shredded cheese, sour cream, jalapeños, or green onions (Margaret Recipes)

Would you like a vegetarian cowboy soup version (swap meat for veggies and beans) or a spicier, Tex‑Mex style version? 🌶️
