Fried Green Tomatoes

Ingredients (serves 2–4):

  • 3–4 firm green tomatoes
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika (optional)
  • 1 egg
  • ¼ cup milk
  • Oil for frying (vegetable, canola, or peanut)

Instructions

  1. Slice tomatoes:
    • Cut green tomatoes into ½-inch thick slices.
    • Pat dry with paper towels to remove excess moisture.
  2. Prepare coatings:
    • Bowl 1: Flour seasoned with salt, pepper, and paprika.
    • Bowl 2: Beat egg with milk.
    • Bowl 3: Cornmeal (plain or lightly seasoned).
  3. Coat tomatoes:
    • Dredge each tomato slice in flour → dip in egg mixture → coat in cornmeal. Press lightly to stick.
  4. Fry:
    • Heat ¼ inch of oil in a skillet over medium heat.
    • Fry tomatoes 2–3 minutes per side until golden brown and crispy.
    • Drain on paper towels.
  5. Serve:
    • Serve hot with ranch dressing, remoulade, or a spicy dipping sauce.

Pro tips:

  • For extra crunch, double-dip in egg and cornmeal.
  • Keep fried slices warm in a low oven (90–100°C / 200°F) if cooking in batches.
