Fried Onions with Smoked Glazed Sausage

Ingredients (serves 4)

  • 1 lb smoked or smoked-glazed sausage (like kielbasa or Andouille), sliced into ½-inch rounds
  • 2 large yellow onions, thinly sliced
  • 1 medium red onion, thinly sliced (optional, for sweetness & color)
  • 2–3 tbsp butter
  • 1–2 tbsp olive oil
  • 1–2 tsp brown sugar (optional, helps with caramelization)
  • Salt & pepper, to taste
  • 1 tsp smoked paprika (optional, for extra smoky flavor)
  • Fresh parsley or chives for garnish

Instructions

  1. Prep the onions:
    Slice all onions thinly. Keep them separated if you want layered flavors (yellow vs red) or mix them for a uniform look.
  2. Cook the sausage:
    In a large skillet over medium heat, add the sausage slices. Brown for 3–4 minutes per side until caramelized and slightly crispy. Remove and set aside.
  3. Fry the onions:
    In the same skillet, add butter and olive oil. Toss in the onions with a pinch of salt and sugar. Cook, stirring occasionally, over medium-low heat for 15–20 minutes until deeply golden and caramelized.
  4. Combine:
    Return the sausage to the skillet with the onions. Sprinkle smoked paprika and adjust salt & pepper. Cook another 2–3 minutes to let flavors meld.
  5. Serve:
    Garnish with fresh parsley or chives. Serve over rice, mashed potatoes, or even toast for a rustic, cozy dish.

💡 Chef’s tip: If you want extra crispy onions, fry a small portion separately in hot oil until golden and sprinkle on top as a crunchy topping. It adds that “wow” factor.
