  3. Simmer: Bring to a gentle simmer. Cook for 3–5 minutes until thickened to your desired consistency.
  4. Season: Add salt, pepper, and optional flavorings to taste. If it’s too thick, add a bit more stock or water; if too thin, simmer a little longer.
  5. Strain (optional): For an extra smooth gravy, pour through a fine mesh sieve before serving.

  • If using pan drippings, pour off excess fat, leaving about 2 tbsp to make the roux. It adds incredible flavor.
  • For creamier gravy, stir in 1/4 cup cream at the end.
