Green Chile Cheeseburgers

Serves: 4
Time: ~25–30 minutes

Ingredients

  • 1 lb ground beef (80/20 works best for juicy burgers)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • 4 slices pepper jack or cheddar cheese
  • ½ cup roasted green chiles (mild or hot, drained if canned)
  • 4 burger buns
  • Optional toppings: lettuce, tomato, onion, pickles, mayo, or avocado

Instructions

  1. Prep patties: In a bowl, mix ground beef with salt, pepper, and garlic powder. Form into 4 patties, slightly larger than buns (they shrink while cooking).
  2. Cook patties:
    • Stovetop: Heat a skillet or grill pan over medium-high heat. Cook patties 4–5 minutes per side for medium, or until desired doneness.
    • Grill: Preheat grill to medium-high and cook similarly.
  3. Add cheese & chiles: During the last 1–2 minutes of cooking, place a slice of cheese on each patty and top with 2 tbsp roasted green chiles. Cover pan or close grill lid to melt the cheese.
  4. Toast buns: Optional, but lightly toast buns on the pan or grill for extra flavor.
  5. Assemble burgers: Place patties on buns and add desired toppings. Serve immediately.

Tips & Variations

  • Spicy version: Mix chopped green chiles into the beef before forming patties.
  • Creamy twist: Spread a little chipotle mayo or ranch on the buns.
  • Cheese options: Pepper jack, Monterey Jack, or even a melty queso blanco works well.
  • Extra crunch: Add fried onions or pickled jalapeños.
