Here’s a simple, cozy Hamburger Soup recipe—easy to make and great for leftovers 🍲

Classic Hamburger Soup

Serves: 4–6
Time: ~35–40 minutes

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups mixed vegetables (carrots, corn, green beans, peas—fresh or frozen)
  • 1–2 potatoes, diced (optional but filling)
  • 1 tbsp tomato paste or ketchup
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • 1 tsp paprika or Italian seasoning
  • Optional: bay leaf, celery, or Worcestershire sauce

Instructions

  1. Brown the beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic, cook 2–3 minutes until soft.
  3. Stir in broth, tomatoes, tomato paste, vegetables, and potatoes.
  4. Season with salt, pepper, and spices.
  5. Bring to a boil, then reduce to a simmer for 20–25 minutes, until potatoes are tender.
  6. Taste and adjust seasoning. Remove bay leaf if used.

Easy Variations

  • Creamy version: Add ½ cup milk or cream at the end
  • Spicy: Add chili powder or a pinch of red pepper flakes
  • Low-carb: Skip potatoes and add extra veggies
  • Cheesy: Sprinkle shredded cheddar on top when serving
